Let’s Celebrate | Banana Cake

Hello, hello, hello…

Today marks the one month-a-versary for Living La Vida Gringo.  What a month it’s been!  From learning the difference between posts and pages, how to embed a printable recipe into a post, and how to incorporate social media to bring people to my website, I’ve had an absolute blast  It’s been a great way for me to use my “nice” camera to take pictures of food I’ve made, and an outlet to write, which I enjoy doing almost as much as cooking and photography.  One of my best moments throughout these past 30 days have been the comments I’ve read from subscribers, and the conversations and text messages I’ve gotten from people giving their support.  I love that people are trying these recipes, and letting me know what they think.  I love getting stopped by people at work to ask questions about recipes.  I love making recipes I’m testing and having people taste test them for me.  I love that people who would rarely cook have tried, and loved, recipes here on the blog.  To each of you I say thank you.  Thank you for letting me come into your inboxes and/or social media to share my passions.   Thank you for subscribing and sharing my blog with your friends and family.   I started this blog with a goal that I would make it “Facebook” official when I got to 50 subscribers or by May 8th.  I had no idea I’d meet this goal within the first month of starting this adventure.

As of this writing, 52 of you are following by e-mail subscription, 60 of you have followed my blog’s Facebook page, 73 of you are following via Instagram, 13 via Twitter, and the website has been visited over 2,100 times; all within 30 days.  Thank you all from the bottom of my heart!  <3

So let’s celebrate with…banana cake.  My mom made this recipe for me years ago, and I made it this past weekend.  The cake is moist and dense, and the flavor is out of this world.  I especially love that the recipe comes out of the 1978 Queen of Peace Hospital Cookbook, which is the same hospital where the Gringo was born.  Two taste testers gave rave reviews (okay, three when you count the Payaso) after they tasted this cake.

Banana Cake

  • Servings: 15
  • Difficulty: easy

Cake Ingredients:

  • 2 small, ripe bananas
  • 1 yellow cake mix
  • 4 serving size banana instant pudding
  • 4 eggs
  • 1 cup water
  • 1/4 cup vegetable oil

Cake Directions:

  1. Preheat oven to 350 degrees.
  2. Add all ingredients into a bowl and mix using electric mixer until combined (about 1-2 minutes).
  3. Pour batter into a greased 9 x 13 baking pan.
  4. Bake for 50-55 minutes until toothpick comes out clean.
  5. Let cake cool completely.

Frosting Ingredients:

  • 2 cups powdered sugar, sifted
  • 1/4 cup Crisco
  • pinch of salt
  • 1 teaspoon vanilla
  • 2 tablespoons flour
  • 1/4 cup butter
  • 2 tablespoons milk
  • 1 egg white, unbeaten

Frosting Directions:

  1. Add all ingredients into a bowl and mix on high speed with electric mixer for 10 minutes.
  2. Frost completely cooled cake.
  3. Top with finely chopped nuts, if desired

Please, please, please, give this recipe a try.  If you like bananas, I guarantee you will like this cake.  You could easily turn the recipe into cupcakes, which would be absolutely adorable.  Given the frosting contains butter and an egg white, I’d recommend keeping the cake in the fridge when you aren’t devouring it.
