Payaso’s Weeknight Guacamole

The Payaso’s weeknight guacamole always hits the spot in our casa.  It’s easy to whip up, extremely versatile, and is a great sidekick to any number of dishes, Mexican or otherwise.   A great sidekick just like my Payaso.  This batch in particular was used to top some sweet potatoes, but not before being used to top some tortilla chips for a pre-supper snack.  Okay, fine, I ate it straight from the bowl with a spoon when the Paysao wasn’t looking.   No judgment, people!  Use this easy guacamole recipe to top nachos, tacos or quesadillas.  It’d also be great on toast,  with fish, and as a condiment to a nice, juicy burger or chicken sandwich.  Keep an eye out for the upcoming stuffed sweet potato recipe; it’s one of our favorites!

Payaso's Weeknight Guacamole

Ingredients:

  • 3 ripe avocados (may depend on size of avocados)
  • 2 tablespoons chopped cilantro, optional
  • 5-6 cherry tomatoes chopped in half or 1 small roma tomato, diced
  • 1 tablespoon of lemon juice
  • 2 green onions, minced
  • Salt/pepper, to taste

Directions:

  1. Cut avocados in half and spoon into a bowl.
  2. Add remaining ingredients to bowl.
  3. Using a fork, combine well until desired consistency.
