Instant Pot Beef & Broccoli

This recipe is Payaso approved and takes less time than ordering from your favorite Chinese restaurant.

Instant Pot Beef & Broccoli

Ingredients:

  • 2-3 pounds of chuck roast
  • 1 medium onion
  • 2 tablespoons minced garlic
  • 1 heaping tablespoon ground ginger
  • 1 tablespoon brown sugar
  • 2.5 cups beef broth
  • 1/3 cup soy sauce
  • 2-3 large bunches of broccoli, chopped
  • 2 tablespoons cornstarch
  • White rice

Directions:

  1. Turn instant pot to saute and add a few tablespoons canola oil.
  2. Cut chuck roast into slices against the grain.
  3. Add sliced beef into a bowl along with garlic, ground ginger, 1.5 cups of beef broth and soy sauce.
  4. Add sliced onion into instant pot and saute onions.
  5. Once onions are sauteed, add beef mixture to instant pot.
  6. Add lid to instant pot and cook under high pressure for 12 minutes.
  7. While the beef cooks, add 1 cup of water to broccoli in a glass bowl and microwave for 6 minutes.  Leave broccoli in microwave until beef is cooked.
  8. After 12 minutes, quick release steam pressure before removing lid.
  9. Combine 1 cup of beef broth with cornstarch and add to instant pot.  Stir for 3-4 minutes while juices thicken.
  10. Add broccoli and mix.
  11. Serve over rice.
  12. Garnish with green onions and/or sesame seeds.

This recipe is totally doable without an instant pot.  I would recommend using a flank steak or ribeye in place of the chuck roast; simply follow the same recipe.  The instant pot works wonders on the chuck roast, which leaves the beef melting in your mouth.  It makes the Payaso go back for seconds, thirds and fourths, y’all.  Now you might be looking at that picture and saying, “Gringo, there’s something wrong with that rice you used.”  Low carb is all the rage, and so many people are substituting cauliflower for rice these days.  We’ve tried that and it’s tasty, but I think it’s so much work to rice the cauliflower.  I recently found a product on Amazon that’s even healthier than cauliflower, and it’s called Miracle Rice.

This was our first time using this product and it met our expectations.  It doesn’t have that earthy flavor that the cauliflower rice has, but it doesn’t have the chew that normal rice has.  The great news is it is very low in carbs and we liked it better than cauliflower rice; it was also MUCH easier to make.
